Chicken Picatta




Ingredients
  1. 1/4 Cup Almond Flour (Actually a little bit more than 1/4 cup depending on how much chicken you have, plus make sure you have almond flour instead of almond meal. Trader Joes does have a super fine almond meal that you could use and it works great.)
  2. 1/4 tsp Salt
  3. 1/4 tsp Black Pepper
  4. 1 TBSP Italian Seasoning
  5. 4 Boneless Chicken Breast (thawed)
  6. 2 TBSP Olive Oil
  7. 2 TBSP Capers
  8. 3 TBSP Butter
  9. 1/2 Cup Chicken Broth
  10. 2 TBSP Lemon Juice


Directions
  1. Mix first four ingredients in small shallow bowl or plate. (almond flour, salt, pepper, and Italian seasoning.)
  2. Using tongs coat each chicken breast on both sides in flour mixture.
  3. Heat olive oil in skillet and cook chicken until done, remove and drain when brown.
  4. Mix capers, butter, chicken broth and lemon juice and pour in pan and bring to simmer, scrape up any flour stuck to bottom of pan.
  5. Add chicken back to sauce and cook for few minutes before serving.
