Pudding Cake

So I made some Betty Crocker Chocolate Cake Mix cupcakes.

I decided to take half of batter and make a small cake.

Then I cut it up in little pieces
and put in a small casserole dish.

I made a small box of chocolate pudding,
the kind you cook, and poured it over.
It was delish!!
I don't have a picture of finish product
because the kids had friends here and they all ate it up so fast.

It was really good and simple.

Don't Forget:

There are many great recipes that are already gluten free. If you are new at eating gluten free - check out recipes you have always made and you may be able to still have them or change one thing. Don't be worried about having to change everything to eat gluten free. You don't have to.

Some good things to know:

Whole Foods will take back food (even if just because you don't like it) so don't be scared to try something new.

Betty Crocker cake mixes can be used for many other things, just start with it and add other things to it.

If you haven't found a favorite bread try

Udi's, I like it the best.

Noodles: I like the corn or corn and rice ones better than just rice noodles, the corn makes them lighter.

Make sure you talk to store managers about carrying gluten free products so they know people are interested.

Email manufacturers of the brands you like and request them to start making gluten free versions of your favorite items.

Soy sauce has gluten in it so make sure you buy gluten free soy sauce. So does most canned soups. Progresso has a lot of gluten free soups.

Tips and things I've learned:

**In my regular recipes that calls for 1 cup or less of flour I replace with Gluten Free Bisquick or Pamela's Baking Mix and usually turns out fine.

**You can ask your grocery store for a list of gluten free items they carry so you know what to look for.

** French Toast - Since gluten free bread is more dry than regular bread when making French toast let the bread sit in egg mixture for longer than usual to soak up some of the egg, it really helps. (The way we like it is with egg, milk, vanilla and cinnamon sugar.)

Guess What?

Schar has sub rolls, I like the 6 inch kind, they are crunchy on outside and soft on inside.

Mission Foods has Gluten Free Tortillas now! Haven't tried them but seen comments that people say they are great. Ask your store for them if you don't see them.

Pillsbury has refrigerated cookie, pastry and pizza dough in the refrigerator section with the rest. It's in a little tub and pretty good. Now they are offering frozen already made muffins but I haven't seen them in stores yet.

Glutino has Instant Baking Mix, have you tried it?

Just found these at our local Kroger grocery store... O'Doughs bagel thins. I tried them and was impressed. I'm sure there is a lot you could do with them. I haven't seen their other products but I will be on the look out.
