Ingredients
- 1/4 Cup Almond Flour (Actually a little bit more than 1/4 cup depending on how much chicken you have, plus make sure you have almond flour instead of almond meal. Trader Joes does have a super fine almond meal that you could use and it works great.)
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 1 TBSP Italian Seasoning
- 4 Boneless Chicken Breast (thawed)
- 2 TBSP Olive Oil
- 2 TBSP Capers
- 3 TBSP Butter
- 1/2 Cup Chicken Broth
- 2 TBSP Lemon Juice
Directions
- Mix first four ingredients in small shallow bowl or plate. (almond flour, salt, pepper, and Italian seasoning.)
- Using tongs coat each chicken breast on both sides in flour mixture.
- Heat olive oil in skillet and cook chicken until done, remove and drain when brown.
- Mix capers, butter, chicken broth and lemon juice and pour in pan and bring to simmer, scrape up any flour stuck to bottom of pan.
- Add chicken back to sauce and cook for few minutes before serving.
