Egg Muffins
Great for on the go.

These are so simple and you just make them however you like your eggs.

How I made them:

Preheat oven to 350 degrees.
I sprayed the mini muffin pan with cooking spray.
I put a little bit of butter in each pan.
Then I put some onions and hash brown potatoes in each, you only need a little bit in each.
Put the pan in the oven and cook the onion and potato until it is sizzling.
While that is cooking mix up eggs, salt and pepper with some cheese, a little milk if you like that in there too or however you like your eggs.
When onions are cooked take the pan out of oven and put small pieces of whatever else you like with your eggs:  bacon, ham or sausage and cut up small pieces and place in each cup.
Then pour egg mixture in each cup.
Cook until eggs are starting to brown up and look done, it depends on your oven and how much you put in there.
Take them out of oven, cool for a little while then pop them out and enjoy.
I put some in refrigerator and warmed up next day and they were good that way too.
