This is so good. When you are making it you will think this isn't enough stuff to give it flavor but it is. Yummy.
- 4-5 Chicken Tenders, or 2 Chicken Breast, whatever you prefer. Doesn't really matter just put some chicken in there, however much you want. :)
- 1 Egg White
- 6 Cups Chicken Broth
- 2 Cans Creamed Corn
- 2 tsp Salt
- 1/2 tsp Pepper
- 1/2 tsp Sesame Oil
- 1/4 Cup Corn Starch
- 2 Egg Whites beaten with fork
- Some bacon already cooked, however much you want, I put three pieces cut up in small pieces. I cook my bacon in oven, works great, no mess. Here's how to do it http://www.glutenfreehelper.com/2014/09/baked-bacon.html
DIRECTIONS
- Make the chicken however you like then cut up in small pieces. I put some olive oil in saute pan, added some dried onions, some fresh garlic and some spices like Italian Seasoning. Set on Medium and cook frozen tenders for 15 minutes, turn over half way. It's really good that way.
- Mix chicken with egg white and 1/2 cup water and set aside.
- In a big cooking pot heat Chicken broth, creamed corn, salt, pepper, and sesame oil.
- Once it is heated before boiling, add chicken mixture to pot and bring to boil.
- Add cornstarch to 1/4 cup of water or chicken broth. Stir to combine. Then add to pot and stir.
- While boiling slowly add beaten egg whites while stirring with fork.
- Add bacon.
- I let my cook for a little while? 30 min on low to let ingredients mix but you could serve right away if you are in hurry. I put it in a crockpot after the 30 minutes and let my family come eat whenever they were hungry during the day. It kept getting better as day went on and it was a great way to just have a snack later.
